Vital COOKING or “simply enjoy”?

Both, says Dominic Baumann, who is in charge of the restaurants Picea and Das Wirtshaus at Burg Vital Resort. Born in Thuringia, he joined the kitchen team at Burg Vital Resort 5*S in 2014. He trained under none other than Thorsten Probost, who was in charge of the resort’s kitchen until 2019.

But one thing at a time. Dominic is multi-talented, as his excellent training proves. He was born on April 19, 1989 in Schleiz, Thuringia. Have you ever heard of it? Schleiz is a district town in the Saale-Orla district and is located in south-eastern Thuringia on the Wisenta, a tributary of the Saale, on the plateaus of the Vogtland. He trained as a chef at the Relais and Châteaux Hotel Jagdhof in the Stubai Valley from 2005 to 2008. Dominic has been with us in Lech at the Burg Vital Resort since 2014, where he spent several years perfecting his passion as a chef as Thorsten Probost’s right-hand man.

Dominic and Benedict, a team

Together with Executive Chef Benedict Jakob, he is currently enchanting gourmets in the Picea restaurant with the two culinary lines “Simply enjoying” and “vitalKOCHEN”. Together, they create new and varied interpretations of local and international dishes. They also show their commitment to Austrian classics in the restaurant Das Wirtshaus. When asked about his personal passion, Dominic goes into raptures: “Braised dishes” is his short, succinct answer. Our guests can get an idea of this speciality of his in the restaurant Das Wirtshaus.

But Dominic’s specialities are not just culinary delights: in addition to his top training as a chef, he has also successfully completed a business administration degree and a personnel management seminar. “I’ve never had enough of the bigger picture,” he says, explaining his penchant for holistic training.
